Recipes :
CONFIT CHICKEN
2 chicken breast fillet
2 cloves of garlic
Fresh thyme
2 slices of lemon
3 cups of chicken fat
Combine chicken and the other ingredients and cook at 120 deg for 1 hr 20 min
Dark beer gravy
1 cup of reduced chicken stock
½ cup of dark beer
50 gram of cold butter
Pour beer into pan. Reduce by half then add stock and bring to boil . turn the heat down and add butter one and whisk until combines well and thickens .
Crispy chicken skin
Scrap fat of the skin and lay flat in a oven tray with grease paper and press it wil one more try from the top with grease paper in between and bake it at 200 deg until it goes golden and crispy.
Note: roughly takes about 20-25 min ,do check every 10 min.
Mash potato
½ kg peeled and cut in cubes potatoes
200 gm butter
1 tbsp water
100 gm yak cheese (grated)
Put all the ingredients in a pot except cheese and cover it with a lid and steam the potatoes in low heat until tender .once potatoes are cooked, blend it in a food processor with cheese until smooth.
Broccoli
Take 2 liters of cold water and bring it to boil with some salt. Add broccoli and cook for 1 min and refresh it into ice water to cool down.
BALSAMIC GLAZE
100 gm sugar
60 ml balsamic vinegar
Cook sugar in low heat until it goes golden caramel and add balsamic vinegar in the pot and mix it well .
KHUWA TART
100 gm of khuwa
80 gms of caramel
Warm the caramel on double boiler and add khuwa into the bowl until smooth and let it aside to cool.
Tart shell
125gm butter
125 gm icing sugar
1nos egg
200gms flour
Combine all the ingredients and let it in the fridge over and make sure dough is super cold when you roll it.
