Gazpacho
2 tubs Native Roots Salsa Company Original Red
4 inch section of day-old bread or roll, torn and soaked in 1 cup water
2 Tbs Sherry Vinegar or Red Wine Vinegar (more to taste)
¼ red onion or green onion optional
1 stalk celery optional
¼ c parsley optional, more for garnish
1 Tbs basil or pesto optional
½ tsp Italian Seasoning or dried or fresh Thyme optional
Kosher salt and Pepper to taste

Place all items except bread in the blender or food processor and mix until smooth. Squeeze excess water from bread and add to the soup and continue to blend until smooth. Taste for salt, pepper, and vinegar. Adjust to your taste.

Shrimp
Clean and devein shrimp, drizzle with olive oil, sprinkle with salt and pepper, 1 clove of grated garlic and chopped parsley. Stir to coat and let marinate for 10 minutes. Place shrimp in a hot skillet and cook for 3-4 minutes, turning until done. Place on top of Gazpach and garnish with additional parsley and croutons.
