Its a make ahead pasta salad with veggies and can be served chilled or at room temperature.
1 cup dry pasta cook it till al Dante or firm to bite and rinse under tap water. I have used chickpea flour pasta you can use any pasta of your choice.
1 cup cherry tomatoes cut into half
1/4 cup diced Cucumber.
1/4 cup finely diced onion.
1/2 cup Mozzarella balls cut into half or use mozzarella block cut into cubes.
1/4 cup black olives cut into half.
1/4 cup Kalamata olives cut into half or u can use green olives.
1/4 cup roasted bell pepper cut into cubes. Dry roast on high flame for 1-2 minutes.
3 Tbspn Chopped Parsley.
Dressing
1/4 cup extra virgin olive oil
1.5 Tbspn white vinegar
1 Tbspn Mayonnaise optional
2 Tbspn grated parmesan cheese or use regular cheddar cheese
1/2 Tspn Garlic powder
1 Tspn Mixed herbs
Salt to taste
Black Pepper as per your liking.
Shake it till everything is well combined.
