12-14 Roma Tomatoes (score-X on the end)
3 TBSP Olive Oil
1 Med/large onion (chopped)
Pinch of crushed red pepper (optional)
1 Head of Garlic (minced)
1 Cup Dry White Wine
3 TBSP Basil (Dried)
Salt (Kosher) & Fresh Ground Black Pepper
Pasta – Tubular (Rigatoni, Penne, etc.)
Large Bowl with ice water & palmful of salt
Optional – Parmesan-Reggiano Rind
