INGREDIENTS –
 12-14 Roma Tomatoes (score-X on the end)
 3 TBSP Olive Oil
 1 Med/large onion (chopped)
 Pinch of crushed red pepper (optional)
 1 Head of Garlic (minced)
 1 Cup Dry White Wine
 3 TBSP Basil (Dried)
 Salt (Kosher) & Fresh Ground Black Pepper
 Pasta – Tubular (Rigatoni, Penne, etc.)
 Large Bowl with ice water & palmful of salt

Optional – Parmesan-Reggiano Rind
