How to prepare stuffed eggplants – ingredients for 4 persons:
2 eggplants
50 g of fresh scamorza
100 g of salamino piccante
30 g of raisins
50 g of Parmigiano Reggiano
some breadcrumbs
½ onion
a few cherry tomatoes
a shot of white wine
olive oil
salt
pepper
muscat nuts
coriander leaves
1 piece of garlic
This video recipe explains how to prepare a traditional dish from Southern Italy, today still popular among Italian community across the world: melanzane ripiene – which is basically stuffed eggplants, mainly with spicy Italian salamino and with scamorza cheese, plus a few other spices and ingrediients.
After frying some of the ingredients, the aubergines will be stuffed and filled, and then roasted in the oven at 170 degrees Celsius for another 20 minutes.
To sum up: melanzane ripiene is a very rich dish with a unique taste and perfectly suitable as a starter or as main dish.
Remember to keep some bread available for the scarpetta at the end! 😉
