A common base you will find with many Italian ragu or sauce recipes is something called a Sofrito. It consist of 3 staple ingredients; onions, carrots and celery.
bolognese sauce recipe is no different. It starts with a sofrito, and is followed by wine, meat and of course tomatoes (paste, passata and whole).
Many people add extra spices and herbs like rosemary, thyme, garlic. Traditional Italian bolognese sauce doesn’t have any of that. It takes a good 4-5 hours to simmer through, but at the end… oh boy is it delicious!
