SPAGHETTI CARBONARA RECIPE:

Servings: 4
Time: 15 minutes
Special equipment: Kitchen grater

ALL THE GOOD STUFF YOU NEED:

– 200 g pancetta or bacon
– 200 g parmigiano or pecorino cheese
– 2 large eggs
– 200 g spaghetti
– 1 tbsp salt
– Freshly grinded black pepper

HOW’S IT COOKING:

1) Bring a big pot of salted water to heat and cook the pasta as described on the package. Remember that the more space the pasta has in the water the better!
2) Cut the pancetta into cubes and fry them in a big pan with some olive oil until crispy.
3) In a bowl, mix two eggs with finely grated cheese until thick and fluffy.
4) Now turn off the heat of your bacon and remove potential fat with a paper towel. Then drain the spaghetti for water and you are ready to mix it all together. It’s important that you don’t have too much heat in your pan once you pour the egg mix over the pasta and bacon. Gently mix the egg into the pasta and you’ll see how that pasta gets coated with a creamy texture. That is how you want it to look.
5) Now serve the carbonara with freshly grinded black pepper!
