Tonight I cooked Carbonara, one of my favorite classic italian pasta recipes, this is an authentic way to make it and is also out of all the methods I have tried, the easiest.

INGREDIENTS:
Spaghetti
Guanciale/Pancetta/Bacon
Eggs
Pecorino/Parmesan
Pepper
Starchy Pasta Water

For the most authentic version use Guanciale, I can barely ever find it in my area so I substitute it for Pancetta.

RECIPE:
– Boil salted water
– Once boiling , add pasta around 200 grams
– In non-stick skillet, render fat from pancetta on medium-low heat
– In bowl, grate 100grams of cheese (pecorino or parmesan or combination of both) add 1 full egg and 2 egg yolks.
-Once pancetta is golden brown, set aside
-When pasta is al dente, add to egg and cheese mixture, mix quickly and vigourously, followed by fat rendered from pork, followed by the pork cut of choice, mixing in between each.
-Finish with extra sprinkle of cheese and pepper on top.
