We’re back with another Farm-to-Table journey🧑🏻‍🍳! Cheese is a cornerstone of the Italian diet and culinary culture🧀 My mission to master the culinary art of Italy demanded that I get a hands-on experience to the process that brings those beautiful blocks of cheese to our table each time before a meal 😋 The artisan farm Podere Le Fornaci ( opened the doors to their very own Goat Farm 🐐 and Cheese Laboratory 🥼 where I not only witnessed, but participated, in the mind-blowing transformation of Goat Milk into Cheese. It turns out fine-tuning the flavor of natural and organic ingredients is a tactical science just as much as it is an art form. No-one showed me that more than our Cheese Laboratory expert Amanda. An expert in all things cheese and a cheese-lover herself, she had no problem explaining the importance of each step in the cheese-making process.

My quest to become a culinary artisan and learn to cook in the beautiful country of Italy 🇮🇹 has already taken me behind the curtain of so many delicacies of this beautiful culinary culture. It can’t hurt to report myself that with each experience during this chapter 🇮🇹 of Month in the Making, my eyes are opened to the many misconceptions in the world of cooking, dieting, and food processing that exist throughout the world. The intimate experience I have shared with the artisanal chefs, farmers, and workers in Tuscany, Italy grant me a new sense of appreciation for the food and flavor that seemingly so easily arrives on my plate at each meal. It is going to be tough to work this new perspective of cooking, dieting, and food processing into my day-to-day life as I travel, but will be a fun…and delicious…challenge I have to doubt!

Next week we are taking a break from investigating Italian cuisine and returning to the kitchen for what might be the Best Cooking Class in all of Tuscany!
