Bresaola with arugula

Bresaola is a cured and air dried beef that is the specialty of Valtellina in the Lombardy region in northern Italy.
You could find it in a good Italian deli or specialty store.
Bresaola must be sliced up paper thin, drizzled with an emulsion of extra virgin olive oil and lemon juice.
It is delicious if you add some arugula and shaved Parmigiano Reggiano.
This dish can be an appetiser but also a quick and light lunch.

50g (2 cups) arugula
50g (1/2 cup) Parmigiano flakes
Half a lemon juice
