RECIPE for the Tomato sauce:
Ingredients:
1 can chopped tomatoes
2 crushed garlic cloves
1 red onion
2 tbsp balsamic vinegar
handful of chopped fresh basil
1 tbsp dried oregano
1 big handful sweet plum tomatoes
1 tbsp mixed Italian herbs
1/2 red chilli (optional)
1 tbsp tomato puree
1 stock cube (we used vegetable but chicken will work)
Salt & pepper to taste
Method for sauce:
Fry off the onions in garlic in a little olive oil until softened. Add all the remaining ingredients, stir and bring to the boil. Turn it down to a a low heat and leave it to simmer for as long as possible (minimum recommended is 20 minutes – the longer you can simmer, the richer the flavour will be), making sure you stir occasionally. We served our sauce on top of fresh tagliatelle and a sprinkling of freshly grated parmesan cheese!
