recipe:
Ingredients for 3 people
240 gr. spaghetti
40-50 gr. seasoned bacon
3 egg yolks
2 tablespoon of grated aged pecorino (cheese made with sheep’s milk)
you can use parmesan or a 50% mix of two cheeses
salt, grated pepper
Procedure:
Fry bacon in olive oil at low heat.
Cook spaghetti in boiling salty water and
keep aside some cooking water.
In a little bowl mix eggs with grated cheese
and sprinkle of grated pepper.
Drain spaghetti cooked “al dente”
drop spaghetti in the pan and mix to make
the spaghetti well oily.
With the heat off, add egg sauce, now
mix well to make spaghetti creamy.
It’s ready, serve at the table quickly!
Add grated pepper on top
individual dishes.
