INGREDIENTS FOR A 25 CM DIAMETER BAKING TRAY
All-purpose flour: 300 g
Olive oil: 150 ml
Fortified wine / marsala / vermouth / sweetened wine: 70 ml
Baking powder: 6 g (2 teaspoons scant)
Sugar: 80 g (5 tablespoons)
Grated peel of half a lemon
1 pinch of salt
Sugar to put on top (about 50 g)

Mix all the ingredients with your hands quickly
Lay the shortcrust pastry on a baking tray, spreading it with your hands to a thickness of 1-1.5 cm
Sprinkle with sugar
Bake at 180 degrees for about 40 min
Leave to cool, eat after a few hours
It tastes even better the next day
