My first ever venture on to youtube was a pretty tragic and cringey affair. It was poorly edited, the lighting and colour grading was way off, and I was awkward af. So I thought I would remake the video and bring it into 2021, because apart from how bad the video was, the recipe itself is tasty as hell, and incredibly easy to make. I first learned about this recipe from a chef I really admire, Rick Stein, and it’s been a staple for me for many years. You could serve this on it’s own, but if you want to stretch it out for more people, then it goes great with some crusty bread and a side salad. Get it made!
To make my fennel sausages with lemon potatoes you will need:
โบ500g of waxy new potatoes like a charlotte
โบ6 Italian sausages
โบ1 medium sized onion
โบJuice and peel of 1 unwaxed lemon
โบ2 garlic cloves finely sliced
โบ4 small fresh bay leaves
โบAbout 50-100ml of water
โบSalt & pepper
โบRoughly 1-2 tbsp of olive oil
โบSmall bunch of freshly chopped parsley
