Italian Bean Soup – so quick and yummy!
1 tbsp olive oil
1 teaspoon cumin seeds
1 green chili sliced
cook 30 seconds over medium heat
4 cloves garlic grated
cook 30 seconds
1 small onion diced
cook until onions are translucent
1 can diced tomatoes – drain the liquid from the can 14.5 ounce can
mix and cook 30 seconds
1 teaspoon black pepper
salt to your taste
1 teaspoon sugar
2 teaspoon Italian dried herbs
mix seasonings together
3 cups vegetable stock or chicken stock
bring to a boil
once boiling lower the heat to low
simmer for 5 minutes over low heat
2 cans white beans – 15 ounce can
drain and rinse the beans before adding to the soup
2 cups fresh spinach
mix spinach in
cook until spinach has wilted
