15 soft dried figs

1 ½ tbsp ground black pepper

1 tbsp caraway

½ tbsp nutmeg powder
2 lemons (1 pressed for curing, 1 for zest)
¼ cup course sea salt
½ tbsp ordinary salt
1 ½ tbsp cane sugar
2 tbsp olive oil
String to tie your Porchetta

Baking time: 6 hours at 360° F/180°C
To have a crispy Porchetta coated the skin with olive oil and set your oven to grill for 15 to 20 minutes.
