Hi guys. Today is a super easy meal that you can make quickly on a busy night.
Recipe
2 tablespoons olive oil
2 boneless skinless chicken breasts, cut in half lengthwise
1 onion, diced
4 cloves of garlic, minced
3-4 tablespoons basil pesto
2 – 14.5 ounce cans of diced tomatoes, do not drain 🙂
1/2 cup water
2 teaspoons Italian seasoning
salt and pepper, to your taste
2 cups shredded mozzarella cheese
pre heat oven to 375.
Add one tablespoon olive oil to an oven safe skillet, heat. Add chicken to the skillet (I seasoned my chicken first with salt, pepper, onion powder and garlic salt). Brown on both sides (about 3 minutes each side if skillet is hot). When chicken is browned, remove from skillet and set aside.
Add one tablespoon olive oil to same skillet, add onions and garlic. Let cook for 2-3 minutes. Stir in 1/2 cup of water. Add canned tomatoes, juice and all. Stir. Add in all other ingredients. Bring to a boil Add chicken. Cover with cheese. Pop into oven and back about 20 minutes until cheese is melty and golden. In the mean time cook the pasta of your choice to serve with chicken.
