Today, we are going to cook Chicken Marsala. Chicken Marsala is an Italian-American dish consist of chicken (breast or thigh is ideal for this dish) in Marsala wine sauce with fresh thyme and oregano for added Italian taste.
–What’s in the fridge today?–
butter
olive oil
flour
chicken (breast or thigh)
garlic (minced)
mushroom (sliced)
red wine
chicken stock
fresh thyme (stem off)
parsley (chopped)
dried oregano
salt & pepper
heavy cream
cornstarch
**optional
baby potato
green and red bell pepper
How to:
1. Seasoned the chicken with pinches of salt and pepper and coat it with flour.
2. In the pan, heat 1 tsp of olive oil and a tsp of butter.
3. Sear chicken for 3-5 mins each side. Once browned, remove from the pan and set aside.
4. In the same pan, add in the rest of the butter. Saute garlic and add in the mushroom and cook until the water from the mushroom evaporates or until brown.
5. Pour in the red wine. Bring to boil.
6. Next, pour in the chicken stock. Add in fresh thyme, sprinkle some parsley, dried oregano and salt and pepper. Bring to boil.
7. Add tin the heavy cream. Stir until well blended.
8. Bring the chicken back to the pan and let it cook, flipping the chicken every now and then to ensure the meat is evenly cooked.
9. Let it simmer for 4-6 mins or until the sauce is reduced in half.
10. Dissolve a tsp of cornstarch and pour it into the pan. Simmer for another 2-3mins until sauce thickens.
11. Remove from the heat and serve hot over pasta, slices of bread or a cup of rice. Enjoy!
