INGREDIENTS FOR 1 PERSON
Arborio or Carnaroli rice 100 g
Rooster combs 50 g
White wine: 25 ml
1 liter of water. 1 bouillon cube
1 clove of garlic
Olive oil
Butter
Pepper, parsley
Cut the combs into small pieces
Wash them
Prepare a hot broth with water and cubes
In a frying pan, fry a clove of garlic, cut in half in olive oil
Add the combs and cook for 3 minutes
Remove the garlic
Add the rice and fry for 2 minutes
Add wine and cook for 3 minutes
Add half of the broth, mix and cook for about 20 minutes
If necessary, add more broth
At the end, add butter if you like and keep stirring
Add pepper and parsley and optional grated Parmesan
