Making Italian Basil Tomato Sauce!
During Lockdown Times we made this a lot in our house!

Use this basic recipe to make your own sauce for a multitude of Italian dishes. Make it YOUR own as you adjust ingredients and the amounts of ingredients to your liking while learning to trust your instincts in the kitchen. No measuring spoons required, but you can use them if it makes you happy.
INGREDIENTS:
Onions 1-3 (depending on how much you like onions)
Garlic 2-4 cloves sliced (OR more depending on how much you like garlic)
Parsley – Approximately 1/4 cup
Oregano – Approximately 2 TB
Basil – As much as you like – I used a large handful, chopped up
Olive Oil – enough to cover bottom of pan
Butter – your choice – I used 3 TB
3 – 28oz cans crushed tomato
1 – 12 oz can tomato paste (will use half and you can refrigerate the rest for another use.)
A shot of White Wine
1TB Sugar
Optional: Parmesan Cheese (as much or as little as you like)
DIRECTIONS:
Chop:
Onions
Garlic
Parsley
Oregano
Basil
NEXT:
Line them up in order and get ready to add them:
Add Olive Oil & Butter to pan
Add 3 cans (28 oz) tomato sauce
Add 1/2 (12 oz can) tomato paste
Add a shot of white wine
Add a tablespoon (use your eye or if you want to you can use a measuring spoon) of sugar
Add oregano
Add basil
Add salt and pepper
NEXT:
After sauce bubbles, add parsley and turn very low.
OPTIONAL:
Parmesan cheese (as much or as little as you like…)

Looking back over my photos and videos during Lockdown, I see that I was immersed in gardening, books new forms of exercising, my artisan projects such as making all natural soap, lotion and other health and home care products, while learning to cook from my amazing in house chef (husband Mikey) and all the while – training a German Shepherd puppy.
