This Italian White Bean Soup with Kale is super nutritious and easy to make! It feels like eating pizza!

INGREDIENTS:

– 400g cooked white beans
– 2 gloves garlic, minced
– 4 carrots, diced
– 200g sweet potato, peeled and cut into cubes
– 2 stalk celery, cut into cubes
– 1 red bell pepper, cut into cubes
– 1 zucchini, cut into cubes
– 1/2 onion, finely diced
– 1 red chili, finely cut
– 10 cherry tomatoes
– 400g tomato sauce
– 1 tbsp soy sauce
– 1 tbsp miso paste, for umami flavor
– 1 tbsp tomato paste
– 5 leaves kale, rinsed thoroughly
– Lemon, if needed

FOR SEASONING:

– 1 tsp dried thyme
– 1tsp oregano
– 1 tsp majoram
– 1/2 black ground pepper

INSTRUCTIONS:

Kale :

We want the leaves only! To remove them from the stem, take the leaves with your hand and push them down. Then finely cut the leaves.

Cut all vegetables ingredients into cubes: red bell pepper, sweet potato, celery, zucchini, onion, carrots and mince the garlic.

LET’S START COOKING:

Add 2 tbsp olive oil in a large wok or pan preheated on medium.

Sauté onion, garlic, carrots, red paprika, celery, zucchini, sweet potatoes, red chili and whisk it all together.

Then add white beans, tomato sauce, thyme, oregano, marjoram, soy sauce, miso paste, tomato paste and toss all together.

Add 2 or more cups of water and sprinkle ground pepper. Then add kale and stir gently.

Cover the pan/wok with a lid and let it simmer at medium/low heat for 30 minutes.

Blending 1/3 of the soup helps it result in a creamier soup!

Put in soup plate and it’s ready to eat!
