MALLOREDDUS WITH RED PESTO AND WILD BOAR SAUSAGE

Serves 4
Ingredients:
500g of Malloreddus pasta
250g of pork and wild boar sausage
120g of organic red pesto
pecorino tipo fiore sardo (to taste)
Fresh basil (to taste)
Black pepper (to taste)
organic extra virgin olive oil (to taste)
Method:
Bring 4 litres of salted water to boil.
Cook the Malloreddus for 12 minutes
Dice half of the sausage and saute in a dry non stick pan
Add the whole jar of the organic red pesto to the pan and mix well
Add 1 ladel of the pasta cooking water to obtain a creamy mixture
Add the malloreddus into the sauce
Stir for one minute
Plate up
Grate some pecorino cheese (min: 00:34)
Add fresh basil to taste
Add black pepper to taste and finish with organic extra virgin olive oil
