FRESH SAUSAGES WITH FENNEL SEEDS AND LEGUMES

Serves 4
Ingredients:
250g of dry borlotti beans
250g of dry lentils
350g of fresh sausage with fennel seeds
70g of organic tomato puree
Dry bay leaf (to taste)
Fruity extra virgin olive oil (to taste)
Black pepper (to taste)
Fresh parsley (to taste)
Method:
Soak the legumes in room temperature water for 6 hours
Drain the legumes and add them to 1,2 litres of fresh water in a saucepan
Add the whole pack of fresh sausage cut into chunks
Add half jar of the organic tomato puree and 2-3 bay leaves
Add few leaves of fresh basil
Let it gently boil for 1 hour and 20 minutes
Plate up
Add the fruity extra virgin olive oil and black pepper to taste
Finish with fresh basil
