CARASAU BREAD WITH EGGS AND SMOKED TUNA

Serves 2

Ingredients:
2/4 sheets of pane carasau
4 fresh eggs
150g of smoked tuna
Fine sea salt (to taste)
Black pepper (to taste)
Organic extra virgin olive oil (to taste)

Method:
Crack 4 eggs in a bowl
Add fine sea salt (to taste)
Add black pepper (to taste)
Add 30ml of water
Mix well
Heat up some organic extra virgin olive oil in a non stick pan
Add the eggs
Stir until stiff
Roll the mixture on itself and divide it into 2 parts
Lay a sheet of pane carasau bread on each plate
With a spatula place each half of the mixture on the carasau
Add 5 slices of smoked tuna on each one
Add organic extra virgin olive oil to taste
Finish with black pepper to taste
