Serves 4

Ingredients:
500g of carnaroli rice
200g of Erborinato cheese
Pecorino Gran Goceano (to taste)
8 walnuts
Fruity extra virgin olive oil (to taste)
Fresh parsley (to taste)
Black pepper (to taste)

Method:
Bring 1,5 litres of salted water to boil
Add 500g of carnaroli rice
Stir throughout cooking until creamy and thick
Cut the whole erborinato cheese into small squares and add it to the pan
Mix well until melted
Cut 5 walnuts in small pieces and add them to the mix
Plate up
Add some pecorino cheese to taste
Add chopped parsley and walnuts to taste
Finish with the fruity extra virgin olive oil and black pepper to taste
