ORGANIC CALAMARATA WITH BLACK PANCETTA

Serves 4
Ingredients:
400g of organic Calamarata
150g of rolled black pancetta
200g of pecorino cream cheese
300g of fresh broccoli
Grated gran goceano pecorino cheese (to taste)
Fruity extra virgin olive oil (to taste)
Sea salt (to taste)
Black pepper (to taste)
Method:
Bring 4 litres of salted water to boil
Cook the Calamarata pasta for 12 min
Stir a couple of times throughout cooking
Add the broccoli into the boiling water and let them cook with the pasta
Cut the pancetta into smaller squares
Saute’ using a non-stick pan
Add the pecorino cream cheese
Mix well
Add some water from the pasta into the sauce
Mix well until it becomes a creamy sauce
Drain the pasta and broccoli then add it into the sauce
Stir for 3 min on medium heat
Plate up
Grate some gran goceano pecorino cheese on top
Add the fruity extra virgin olive oil to taste
Finish with black pepper
