LINGUINE WITH PORCINI MUSHROOMS

Serves 4
Ingredients:
400g of linguine
120g of porcini mushroom cream
25g of dried porcini mushrooms
fruity extra virgin olive oil (to taste)
semi-matured pecorino cheese (to taste)
sea salt (to taste)
black pepper (to taste)
Method:
Bring 4 litres of salted water to the boil
Cook the linguine for 10 minutes
Put the dried mushrooms in a bowl
Pour boiling water into the mushrooms
and let them soak for a couple of minutes
Pour the porcini mushroom cream into a non-stick pan
Add the porcini mushrooms (thinly cut)
Add three quarters of the mushrooms water and cook till pasta is ready
Drain the linguine
Mix the pasta well with the cream and mushrooms for one minute
Grate the pecorino cheese on top of the linguine, once on the plate
Add fruity extra virgin olive oil (to taste)
Add black pepper (to taste)

150g of gran goceano pecorino cheese.
