cajun fusilli pasta recipe:
Ingredients:
Fusili pasta(or any other pasta)-200gms
Grated cheese- 1cup
Butter-2tbspn
Finely chopped garlic-2tsp
Chopped capsicum-2tspn
Boiled sweet corn-half cup
Pepper powder-1tsp
Chilli powder/Peri peri powder-1tsp
Mayonnaise or Chipotle sauce-2tsp
Tomato ketchup-2tbspn
Oregano+mixed herbs/Italian herbs-2tsp
Milk-3cups
Maida/all purpose flour-2tbsp
Salt-1tsp
Chilli flakes-half tsp
Oil -1tsp
Procedure:
1. In a pan,boil one litre of water adding half tsp salt and one tsp oil, bring it to boil.
2. Once boiling,add pasta,stir well and let it boil, in a high flame.
3. Once the pasta starts boiling,slow down the flame to medium level and cook for another ten minutes.
4. Once cooked ,(don’t cook until mashy) drain the pasta and rinse with cold water and keep aside.
5. In a pan,add butter and chopped garlic, keep stirring for ten seconds,then add maida and stir for another twenty seconds, then add half of the milk, lowering the flame.
6. Mix the maida and milk thoroughly,(without forming lumps), then bring it to boil,add sweet corn and capsicum,mix well.
7. Add cheese, let it mix for ten seconds,then add Chipotle sauce or mayonnaise, tomato sauce, salt,peri peri powder,pepper powder, Italian herbs, chilli flakes and rest of the milk, bring it to boil ( in a medium flame) stirring continuously for 2minutes (otherwise it might stick to the bottom of the vessel), turn off the stove, garnish with Italian herbs, chilli flakes, and serve hot.
