Chicken Pesto Pasta is an Italian dish with a small twist in the making of Pesto sauce. It’s a complete meal with chicken & pasta in a pesto sauce. Pesto sauce is flavourful & traditionally consists of basil leaves , pine nuts , crushed garlic , coarse salt, and Parmesan cheese all blended with olive oil. But in this video we’ll be making a slightly different pesto using coriander leaves also known as cilantro & cashews which are easily available & less expensive when compared to basil & pine nuts.
Also this dish can be prepared really quickly with just a handful of ingredients.

Ingredients
For Pesto Sauce :
Raw cashews /almonds 1/4 cup
Coriander leaves 1 bunch (2 cups )
Lemon juice 1 Tbsp
Garlic cloves 2
Grated parmesan cheese 1/2 cup
Extra virgin olive oil as required
Salt to taste

Other ingredients:
Boneless chicken 400g
Mushrooms sliced 3/4 cup
Penne pasta (pasta of your choice) 2 cups
Black pepper powder
Salt to taste
Extra virgin olive oil
Grated parmesan cheese

Notes :
1.Do dry roast the nuts or use roasted unsalted nuts.
2. Can substitute cashews with almonds.
3. Any left over pesto sauce can be stored in the refrigerator for upto a week.
4. Can add red chilli flakes to spice up the pasta.
5. For vegetarian version, omit chicken & can add cherry tomatoes as well if you like.
6. Also can add a dash of cream to make it a bit creamy.
7. If you have leftover cooked chicken, it can be used in the pasta. You can save cooking time.
