Ingredients:
Salmon
Leek
White wine
Butter
Parsley and Mixed Italian Herb
Salt
Pepper
Spring Onion
Red Onion
Lemon

Procedure:
1st Chop Leeks, put Butter in pan then add leek, add white wine, and Italian Mixed Herb cook it and confit for 30mins in a slow fire.
2nd Remove Salmon skin, put the skin in a pan with paper add olive oil, salt cover it with paper and put heavy plate on top then bake it for 20-25 mins at 190 C.
3rd Red Onion Cut into small pieces
4th Salmon put add salt and pepper then put butter on the pan then seared the salmon (not over cooked it) then add white wine, Lemon Juice and Red Onion.
5th Prepare the plate with leek confit and put salmon on the top.
6th Add Butter on the pan use whist for emulsion then strain the sauce. Put sauce on the top of salmon. Add the chop Spring Onion on it.
7th Salmon Skin on top.
8th Serve it with Plain rice or green veggies
