Hello everyone today I propose this delicious and creamy Carbonara the authentic, and the best, because you deserve all the best, in this video I teach you how to cook an excellent carbonara and I reveal some tricks, to make a perfect carbonara and make it more special. Ingredients for one person :

– Water for the spaghetti
– Guanciale 70g (Pig cheeks)
– Pecorino Romano 50/60 g
– 1 egg per person ( i put always one extra egg to make more creamy)
– pepper

Simple ingredients big flavour.

Method:

1- To prepare the carbonara it takes a short time, so the first thing to do, is to dip the spaghetti into a boiling water with salt (rock sea solt) but not too much because we have the pecorino cheese which is already salty).
cook the spaghetti according to the packer instructions, when is comes to time, making sure the spaghetti is al dente.

2- Now take the Guanciale (pig cheeks) remove the skin and cut into a strips, cook in a no stick fry pan without any oil, on a low midium heat and leave it to cook slowly, and it will create its own delicious oil. ( let the guanciale crisp up very gently).

3- in a mixing bowl, add the eggs and whisk them properly.

4- next step add inside the eggs the Pecorino cheese and some black pepper, whisk to combine everything together ad ypu cream is ready.

5- once the spaghetti are ready, take out from the water, and put them straight in the fry pan with the guanciale, then use the ladle and put inside a full scoop of pasta water in the eggs and mix them.( this process is very important, becouse the pasta water is the KEY to make the PERFECT CARBONARA RECIPE)

6 – Now turn off the heat put a ladle full of water in the spaghetti and add the eggs, stir gently but fast until all the ingredients become together.
