Here’s a simple Italian Bruschetta recipe that you can make at home.

Classic Tomato and Basil Bruschetta Recipe
Recipe Ingredients

1 baguette
1 pint cheery tomatoes halved
1 shallot fine dice
2 cloves garlic minced
6 basil leaves chopped
2 tablespoons olive oil
1 tablespoon salt

Method

Slice baguette, 1/2 inch thick. Preheat a barbecue or grill pan to medium heat, grill the bread 2 minutes on each side until you have nice golden brown grill marks.
In a mixing bowl add the tomatoes, shallot, basil, garlic and combine. Add olive oil, salt, and pepper. Set aside in the fridge for 30 minutes or overnight in the fridge.
Rub each slice of grilled bread with a whole garlic clove and drizzle with olive oil.
Spoon the tomato mixture on top of the baguette and serve!

Brie and Apple Bruschetta Recipe

Ingredients

1 loaf Fig and anise bread sliced
2 apples sliced
12 slices of Brie
1 tablespoon honey
3 tablespoons pecans chopped
1 tablespoon olive oil

Method

In a preheated sauté pan add 1 tablespoon of olive oil, add the sliced bread and cook on both sides about 2 minutes until golden brown.
To assemble the Bruschetta place a piece of Brie followed by the sliced apples. Garnish with chopped pecans and drizzle with honey.

Butternut Squash Bruschetta Recipe

Ingredients

1 loaf fig and anise bread sliced
1 butternut squash
3 sprigs thyme
1/2 cup goat cheese
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper

Method

Pre-heat oven to 350, prepare a baking sheet with parchment paper.
Peel the butternut squash and cut in half, remove the seeds and dice to medium-small cubes.
Season with salt and pepper, add the sprigs of thyme. Bake for 40 minutes until the squash is tender and caramelized.
In a preheated sauté pan add 1 tablespoon of olive oil, add the sliced bread and cook on both sides about 2 minutes until golden brown.
Spread goat cheese on each slice of toasted bread and top with the roasted squash and serve!

Cranberry Aperol Spritz

Ingredients

1 ounce Aperol
1 ounce cranberry juice
3 ounces Prosecco
orange slice
frozen cranberries
ice

Method

In a wine glass filled halfway with ice, add the Aperol, cranberry juice and top with Prosecco.
Garnish with an orange slice and frozen cranberries.
