Hi everyone, today I prepared this delicious risotto with porcini mushrooms and fresh parsley, a dish rich in flavors and very simple to prepare even at home.
Ingredients for 2 person
– Rice Arborio or ( Carnaroli)
– 1 shallot
– Porcini mashrooms 120g
– Fresh parsley to taste
– White wine half glass (for blend)
– Butter 30g
– Parmesan cheese to taste
– Extra virgin olive oil
– salt and pepper to taste
-Vegetables stock 1,5 L
– Process
-To prepare the rice, start by soaking the mushrooms in cold water, leave them inside until they become soft (time 20-30 min)
– Once the mushrooms are ready, start with the preparation of the rice, in a non-stick pan add 2 -3 tablespoons of extra virgin olive oil, the chopped shallot and let it sweat for 2-3 minutes
– Then add the rice and toast it until the rice grains becomes transparent, (3-4 minutes)
– At this point, blend with thin white (half a glass) and let the alcoholic part evaporate, once the wine has evaporated, add the mushroom water, and finish cooking with vegetable broth or if you want to make it lighter, add some ‘warm water
– In the meantime, chop the mushrooms and sauté them in a non-stick pan with a drizzle of olive for a couple of minutes, a pinch of salt and add them to the rice, I also added a little chopped parsley to give a touch of freshness and continued until when cooked, cook (15-16 minutes.)
-Once the rice is ready, stir in a knob of butter and some grated Parmesan to taste and your rice is ready.
