This video is about picking wild plants and making wild plants risotto. This recipe was taught by my Italian mother-in-law who can cook very well. Who would have thought that the plants that randomly grow in your yard could be eaten? Thanks to my Italian MiL, I learned how to cook this scrumptious wild plants risotto or the “risotto alle erbe selvatiche” as they call it in Italy. Even if you’re not an avid fan of leafy vegetables, this will surely change your mind. The ingredients are as follows:
Dandelion (tarassaco) – use the buds and a few young leaves
Bladder campions (carletti)
Flatweed (piattello) – use only a few as they are bitter
Hop tops (cime di luppolo)
Poppies (rosoline)
Asparagus (asparagi)
Risotto rice (riso)
Onion (cipolla)
Chili flakes (scaglie di peperoncino)
Salt (sale)
Pepper (pepe)
Butter (burro)
Parmesan cheese (parmigiano)
Hot broth (brodo di dado)
