You need:
1/2 cucumber
1red onion chopped
450g ripe tomatoes
75g black olives
200g vegan feta cheese, used @violife_foods the best.

For dressing:
1 garlic clove chopped
4 tbsp olive oil
1 tbsp white vinegar
1/2 tap fresh oregano or 1/4 of dried.
1 tsp tamari sauce
Pinch of salt, black pepper and sugar. Put all in a jar and shake it..

500g cooked penne in salted water.
I also added 4 tbsp of Hemp for extra protein, magnesium and omega3 from @linwoodshealthyfoods
