Out of the many international cuisines, Indians are truly obsessed with Italian food. Be it the pastas, the pizzas, the lasagnes..to satisfy our cravings for a hearty meal.
This dish ‘Italian Delight’ is my version where you have aromatic and flavourful exotic vegetables tossed in red-white sauce served with mint flavoured rice and cottage cheese.
The gravy has the traditional hint of Italian herbs such as paprika and oregano with cheese and the rice & paneer give it that Indian touch which makes a very powerful combo.
