Chicken Cacciatore without wine – some chichen, vegetables and mushrooms, some mediterranean spices and tastes and you get this perfect, delicious dinner with very little oil. If you like you can add olives too.
Ingredients:
sunflower oil
2 chicken drumsticks and 2 chicken thighs
350 g (12.5 oz) cleaned mushrooms, sliced
1 onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 carrot, sliced
500 ml (2 cups) vegetable broth
2 cloves of garlic, finelly chopped
1 can (28 oz) of diced tomatoes with their juice
salt, pepper
1 tsp dried oregano
1/2 tsp dried basil
Season chicken with salt and pepper.
Heat few tablespoons of oil and fry the chicken for 3-4 minutes on both sides.
Remove the chicken from the pan and set aside. To the same pan add some oil (3-4 tbsp) and mushrooms. Cook for few minutes. When mushrooms release water, add diced onion. Cook for 5 minutes then add peppers and carrot. Cook for about 5 minutes then add vegetable broth, garlic and tomatoes with their juice.
Season with salt and pepper to your tastes, add oregano and basil and stir well to combine. Cook for about 10-15 minutes.
Preheat oven to 200 C (400 F).
Arrange the chicken in the pan that will go to the oven and spread the vegetables in between .
Bake in preheated oven for about 45 minutes.
