Octopus in red wine – Naples Style!

History

La Vela is all about Octopus! Italy is all about red wine!

Ingredients

One 750g octopus
600ml red italian wine
Pinch of demerara
Bag of frozen peas
2 plump sliced garlic cloves
6 sliced shallots
4 plum toms
Chopped flat leaf
Copious olive oil

Method

Chuck octopus into oven smothered in olive oil for 2 hours at 150

Sizzle garlic in 50 ml olive oil add toms and shallots. Sauté gently. Add red wine reduce by 90%

Add chopped up octopus, and 100ml water. sauté for 30 mins

Add peas for 5 mins
