Ok, it’s minus the garlic, Parmesan, and of course the Spinach, one of the main ingredients that make it an Italian Wedding Soup! Nevertheless, it makes a Great Meatball Soup with little bow-tie pasta called Farfalloni. It’s yummy, delicious, and high in protein. I hope you enjoy this recipe! Enjoy!!

A Few Notes:
Not the best Knife Skills on this one! Make sure your stock is heated while cooking before adding it to the mirepoix, which was not mentioned. Also, the pasta should only take a few minutes, al-dente…to the bite, following the instructions on the package. Oh, I almost forgot…the curly leaf parsley is a bit sweeter than the flat leaf parsley. I’m not knocking the flat leaf parsley which is used in so many culinary dishes. I use the curly leaf parsley in my juicing….(:

Please Note: The egg also binds all the ingredients together, giving it a richer flavor. (:
