Easy Italian food that you can enjoy using local ingredients.
Ingredients:
For pesto:
1 cup Basil
7-8 cloves fresh garlic
1/2 cup olive oil
1/4 cup parmesan cheese
1/2 cup fresh boiled peeled peanut
Procedure:
Mix all together in food processor or blender and process until almost paste. Then set aside.
For mussels:
500g mussels
1/2 cup white wine
1/2 cup water
2 tbsp olive oil
Procedure:
Sauté mussels in olive oil and deglaze with white wine add water and simmer for 3 minutes. Set aside.
General ingredients:
500g pasta, cooked al’dente.
40g unsalted butter
500g cooked mussels
1.5 cup prepared pesto
Salt TT
Pepper TT
Final procedure:
1)sauté mussels in butter.
2)add pesto and mix properly. Lower the heat to avoid scorching.
3) add pasta and mix properly.
4) taste before adding salt and pepper.
