This side dish couldn’t be easier, but it is loaded with flavor. Serve as is, or over hot, buttered pasta.
Italian Tomatoes & Zucchini for One or Two
3 Roma tomatoes, cut into fourths
2 cups sliced zucchini
1/4 cup diced onion
1 tablespoon oil
1 teaspoon brown sugar
1/2 teaspoon Italian seasoning
1 tablespoon Parmesan cheese
Heat a large skillet over medium high heat. Add oil, then the vegetables. Saute over medium heat for 5 minutes, stirring frequently. Add brown sugar and Italian seasoning. Stir gently to combine and cook another 2 minutes. Remove from heat. Serve as main or side dish. Or serve over hot, buttered pasta. Garnish with Parmesan cheese.
