Healthy Italian Ground Beef Filling
2 (16 oz) packages 92% Lauraβs Lean Ground Beef
2 large yellow onions, diced
2 green bell peppers, diced
1 (8 oz) container mushrooms, diced
2 tablespoons minced garlic
2 tablespoons dried basil leaves
2 tablespoons Italian seasoning
3 teaspoons salt, more or less to taste
1 teaspoon red pepper flakes
1 teaspoon paprika
1 teaspoon black pepper
1 teaspoon fennel seed
Heat a large non-stick skillet over medium heat.
Once hot, add in Lauraβs Lean Ground Beef, onions, peppers, mushrooms, garlic, basil, Italian seasoning, salt, red pepper flakes, paprika, black pepper, and fennel seed.
Cook, breaking up the beef as you go, until the meat is no longer pink and the peppers are tender.
Taste and re-season, if necessary, then drain any excess grease.
Portion the filling out into 3 separate sealable containers for breakfast, lunch, and dinner food prep β youβll need 3/4 cups for breakfast, 3 cups for lunch, and 4 cups for dinner. Store in the fridge until ready to use.
Breakfast: Egg Cups
3/4 cups healthy Italian ground beef filling
12 tablespoons chopped spinach
12 teaspoons crumbled feta
12 teaspoons minced sun dried tomatoes
9 large eggs, whisked
Salt and pepper, to taste
Preheat oven to 350 degrees F and grease a standard non-stick 12 slot muffin tin with cooking spray.
Spoon 1 tablespoon beef filling into each prepared slot.
Top with 1 tablespoon chopped spinach, 1 teaspoon crumbled feta, and 1 teaspoon sun dried tomatoes.
Fill each slot evenly with whisked eggs, then season with salt and pepper, to taste.
Bake in preheated oven for 20-30 minutes, or until the eggs have set.
Serve warm with a side of fruit. Store cooled leftovers in the fridge for up to 4 days.
To reheat: microwave until warm.
Lunch: Beef Sandwiches
4 whole wheat buns
3 cups healthy Italian ground beef filling, warmed
12 tablespoons marinara sauce, plus more for dunking, if desired
4 slices provolone cheese
Sliced pepperoncini peppers, to taste
Open 1 bun onto a silicone mat lined baking sheet.
Top bottom half with 3/4 cups healthy Italian ground beef filling.
Spoon 2 tablespoons marinara sauce onto the filling, then place on 1 slice provolone cheese.
Broil until the cheese has melted and the top bun is golden brown (the top bun may cook faster than the cheese melts).
Remove from oven then spread top bun with an additional 1 tablespoon marinara sauce.
Serve sandwich with sliced peppers and enjoy with roasted veggies on the side.
Best served immediately, so only make as many as youβll eat in one sitting.
Dinner: Baked Ravioli
1 (24 oz) jar pasta sauce
4 cups healthy Italian ground beef filling
1 (25 oz) bag frozen spinach and cheese ravioli
1 (8 oz) bag mozzarella or shredded Italian cheese blend
Preheat oven to 350 degrees F and grease a 9×13 inch baking dish with cooking spray.
Spoon a thin layer of the pasta sauce into the bottom of the prepared pan.
Top with 2 cups of the beef filling, then half the frozen ravioli.
Spoon on 1/2 the remaining sauce, then sprinkle with 1/2 the cheese.
Top with remaining beef filling, ravioli, sauce, then cheese.
Cover with tin foil thatβs been greased with cooking spray.
Bake in preheated oven for 45 minutes, remove the foil, then bake, uncovered for an additional 15 minutes or until the cheese has melted.
Serve hot with your favorite side salad. Store cooled leftovers in the fridge for up to 4 days.
To reheat: microwave until warm.
