This week I’m making one of my favorite Italian cookies. Perfect with afternoon coffee or tea. Enjoy!
Mixer that I use (affiliate):
INGREDIENTS
Wet ingredients:
2 eggs at room temperature
1⁄2 cup of sugar
1⁄3 cup of vegetable oil or olive oil 1 tsp of Vanilla extract
zest of 1 lemon
Dry ingredients:
2 cups of all-purpose flour 1 tsp of baking powder pinch of salt
DIRECTIONS
Whip the eggs with a hand mixer or a kitchen mixer with a wire whip. Whip the two eggs for 2 minutes. Add sugar slowly until the sugar is well mixed with the eggs, then add oil, vanilla extract and lemon zest. Total whiping time is about 3.5 to 4 minutes.
Add the dry ingredients to the egg mixture, and mix in the flour ingredients. Stir the flour mixture with a wooden spoon until the flour is well mixed in. Let dough rest for about 10-15 minutes.
Heat the oven to 350 degree F.
Start rolling out the dough. Roll out about 2 tbs of dough lumps on a flat surface sprinkled with flour. Shape the dough in your preferred shapes . You may roll the dough into a braids as shown on my video, or make letters of the alphabet and geometric shapes – even the shape of a pretzel.
Line up the cookies on a cookie sheet covered with baking paper as shown on the video . As an option, you may brush the cookies with some egg white or a whole egg, or you may sprinkle some sugar or simply leave it plain.
Bake the cookies for 18 minutes at 350 F until they are light golden in color.
Transfer the cookies to a wire rack in order to cool. (You may try them out while they are still warm, even as you take them out of the oven) : )
