Stroganoff is a dish of Russian origin comprising usually of beef, mustard, sour cream and a little stock. My take is a Chicken Stroganoff with an Italian twist for it is made with pasta, tomato paste, garlic, and a handful of parsley. With mushroom, bell pepper, and chicken stock thickened with a crème fraîche sauce, it tastes heavenly! It’s fast and easy to make using only basic ingredients. INGREDIENTS:
2 medium Chicken breasts (skin off)
6-8 Mushrooms (Swiss or alternative)
1 green Bell pepper (sliced into strips)
2 medium Onions (minced)
3 cloves Garlic (minced)
4 tablespoons Butter (3 tbsp for frying; 1 tbsp for sauteing)
1 cup Chicken stock
2 teaspoons Dijon mustard
2 tablespoons Tomato paste
2 tablespoons Crème fraîche
½ teaspoon Salt
½ teaspoon Black pepper
100 grams Fusilli pasta
