Tuscan Chicken and Shrimp
* 3 tbsp. extra-virgin olive oil
* 4 large boneless chicken breast fillets, patted dry with paper towels
* kosher salt
* Freshly ground black pepper
* 4 cloves garlic, minced and
*2 tsp garlic powder
* 2 c. halved red, yellow and orange cherry tomatoes
* 2 c. baby spinach
* 2/3 c. heavy cream
* 1/4 c. Asiago cheese
* ¼ c. Parmesan
* 1/2c. chopped herbs (such as basil and parsley)
* 4 tbsp. unsalted butter
* Lemon wedges
* 1/2 c. Chicken broth
* 1/2 c. white wine
1 1/2 cup of sliced red yellow orange sweet peppers
Cooking instructions
1. In a large skillet over medium-high heat, heat oil. Season chicken all over with salt and pepper.garlic powder, black pepper. When oil is 375 degrees, add chicken and cook until well. Cook 4 -7minutes on each side. (Gauge for doneness). Remove from skillet.

3. Reduce heat, then, add butter. When butter has melted, stir in minced garlic and cook until slightly caramelized. Add white wine and cook for 3 minutes.
4. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst.
6. Stir heavy cream in slowly allowing slight browning to happen from the caramelized pan. Then, add the chicken broth/ or water to slightly thin out mixture. Add 1/2 the parmesan; Then, add herbs and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 6 minutes.
8. Return chicken back to skillet and simmer until is cooked through, about 5 minutes more.
9. add broccoli and shrimp; simmer for 6 minutes
10. Garnish with additional herbs and squeeze lemon wedges on your meal Enjoy!
