I am sitting high above the magical town of Dogliani, located in Piemonte Italy. The town is famous for making Dolcetto wine, a red wine with high tannins, but juicy with lower acidity that makes it very versatile for pairing. This wine is often overlooked, but is absolutely delicious. Dogliani is a culinary mecca of the world with hills full of Michelin restaurants, hazelnuts and white truffles. Go up into the Swiss Alps or be down by the Ligurian seaside in 30 minutes from here.
