Marinara Sauce
Crushed Tomato 28oz (2 can) or Use fresh tomato, roast and take out the seeds.
Onion Chopped 1
Oregano 1tsp
Garlic cloves 3 chopped
Red Chilly Flakes 1 tsp
Balsamic Vinegar 1tbsp (sub with Red wine vinegar (apple cider vinegar)+
sugar or maple syrup or honey)
Fresh basil 1/2 cup (sub with dried basil/mint)
Olive Oil 1tbsp
Salt 1tsp
Sugar 1tsp
Bake/Roast
Eggplant 1 diced
Olive oil 1tbsp
Black pepper 1/2 tsp
Dried Oregano/Basil/Parsley 1 tbsp
(or other dried herbs)
Garlic powder/Grated Garlic 1tsp
Salt 1/4 tsp
Use any choice of your meat or seafood, you dont have to bake, saute for 7-8min
Bake at 425 for 20 min or stove top grill until edges are brown
Pasta 2 cup (use any type
like chickpea/lentil)
Salt 1tsp
Water
Olive oil 1tsp
Bring a large pot of salted water to a boil.Add the pasta and cook as per the label directs.
Arrange pasta with sauce and eggplant, sprinkle cheese(optional) Cover it with lid or foil, bake at 400 F for 10min and bake 3-4 min more lid off(uncovered). You can do this on stove top too.
