Ingredients:

2 Scallions
1 Bell Pepper
1 Medium Sized Tomato
1 Lemon
10 oz. Sweet Italian Sausage (1.5 links)
1 tsp. Chili Flakes (optional)
6 oz. Rigatoni Pasta
2 tbsp. Cream Cheese or ¼ cup Heavy Cream
4 tbsp. Sour Cream
¼ cup Parmesan Cheese
Salt
Pepper
Olive Oil

Directions:
1. Chop scallions. Separate stock (white portion) from tops (green portion)
2. Slice bell pepper into strips and cut in half
3. Dice tomato into pieces
4. Cut lemon into wedges
5. Remove sausage from casing. Break sausage into pieces
6. Boil water for pasta. Add salt to water for flavor (optional)
7. Add rigatoni pasta and cook until al dente
8. Under medium high heat, sautƩ chopped bell pepper and scallion stocks. Cook for ~5 minutes
9. Season with salt & pepper
10. Add broken up sausage and chili flakes (optional). Cook for ~8 minutes
11. Add diced tomatoes, half a ladle of pasta water and stir. Cook for ~3 minutes
12. Add sour cream, heavy cream/cream cheese, half of parmesan cheese and stir together. Cook for ~3 minutes
13. Remove rigatoni pasta from water, add to pan and combine thoroughly. As sauce begins to thicken turn off the heat
14. Portion pasta on plate, top with remainder of parmesan cheese, garnish with scallion tops (green portion) and squeeze lemon wedge over pasta
15. Pair with Ironstone Vineyards Petite Sirah
16. Enjoy!
