Spaghetti alle Vongole “Spaghetti with Clams” is a pasta dish that is very popular throughout Italy. This dish can be made two ways which are bianco (white) and rosso (red). The one which I have made is the bianco style which includes garlic, parsley and white wine and if you take rosso you add tomatoes and basil to this dish. Both styles are extremely simple to make and are really delicious. The clams which I have used here are frozen white clams. You can see most of the clams are already open when I added into the pan and it’s because the clams are frozen and it doesn’t make any difference or alter the taste in anyway but If you get fresh clams then never use the ones which are already open. I always use white clams for this dish because they are easy to find and also have a sweet taste which I really enjoy but try making this dish with a mix of different types of clams so you get a complex sea flavour. Ingredients
. 150g spaghetti
. 450g pacific white clams
. 1 garlic clove
. 1 red chilli
. Anchovy fillets
. White wine
. Parsley
. Extra virgin olive oil
. Sea salt flakes

Method
. Chop the garlic and red chilli
. Add some extra virgin olive oil into a pan
. When the oil starts to heat up add a few anchovy fillets
. The anchovy will start to melt and dissolve
. Once the anchovies melt add the chopped garlic and red chilli
. After a minute add the clams into the pan
. Let it simmer for a few minutes
. Meanwhile boil and drain the spaghetti and set aside
. Pour half a glass of white wine into the pan and let the juices reduce
. When the white wine and the juices starts to reduce add the cooked spaghetti
. Garnish with some parsley and sea salt to taste
. Add extra parsley and extra virgin olive oil while plating
