2 Beyond Sausages, Spicy Italian style
1 16 oz can of cannelini beans, drained and rinsed
2 cups vegetable broth
1/2 yellow onion, chopped
1 bay leaf
1 tsp paprika
1/2 tsp red chili flakes
1/8 tsp black pepper
1/4 cup white wine
1/2 bunch kale, chopped
Salt to taste
vegan parmesan cheese to garnish
1 pinch red pepper flakes to garnish

In a soup pot over medium heat crumble the sausages and saute for two minutes. Add chopped onions and saute til translucent. Add paprika, red chili flakes, and black pepper, and stir. Deglaze the pot with white wine, and simmer for one minute. Add beans, broth, and bay leaf, bring to a boil over high heat, then simmer on low for thirty minutes, covered. Add chopped kale, and simmer til the kale is cooked to your liking. Taste for seasoning, and serve with grated vegan parmesan and red chili flakes. Serves two.
